These are some of the 130 cupcakes I was asked to make for a wedding.
A mixture of chocolate and vanilla cakes, four colours, four flavours of icing, decorated with white sparkly hearts and finished with a sprinkling of silvery glitter.
It was something of a marathon baking session and I did hit a problem with the first couple of batches of cakes, a problem I've never encountered before. As they were cooling, some of the cakes pulled away from the paper cases and had to be relegated to the cake tin (well, some went into the freezer) for our own consumption. All 25 of them. I'd used the same recipe I've always used, baked them at the same oven temperature, used the same cake cases. I have to admit, it did throw me into a bit of a panic as I had visions of a discarded cake mountain and not enough perfect specimens to give to the bride-to-be. Fortunately, after sending the Husband to buy emergency/just-in-case ingredients, the cakes behaved themselves and, armed with a new piping bag, I was able to get on with icing them. I still have no idea what the cause of the problem was so any suggestions will be very welcome.
